Biological Activity

Cellulase is a group of enzymes that catalyze the hydrolysis of cellulose to produce glucose and low polymerizing fibers, including three major components of dextran endonuclease, dextran exonuclease and cellobietase.

Definition of activity: 1g of enzyme powder (or 1ml of enzyme solution) hydrolyzes sodium carboxymethylcellulose substrate for 1 hour at 50°C and pH 4.8 to produce a reducing sugar equivalent to 1mg of glucose, which is 1 enzyme activity unit, expressed in u/g (or u/ml).
Properties: pale yellow powder or yellowish-brown freeze-dried powder.
pH 4.0~5.5, optimal 4.8, depending on the substrate.
The operating temperature range is 40~60°C, and the best is 50°C.
Impact factors: Activators are sodium fluoride, magnesium, cobalt chloride, cadmium, calcium phosphate and neutral salts. Inhibitors are fiber disaccharides, glucose, and methylcellulose.
