Description: Hydroxy-pheophytin a is a primary degradation and oxidation product of Chlorophyll a. The central magnesium ion (Mg2+) is lost and replaced by two hydrogen atoms (forming the pheophytin core). It is typically formed via the allomerization (oxidation) of chlorophyll or pheophytin during plant senescence, fruit ripening, or processing. Rather than acting as a functional photosynthetic pigment, it serves as a biomarker for monitoring the oxidative stress and degradation pathways of chlorophyll in natural or food systems.
